Do You know the Iberian hams and sausages from Salamanca?

In the natural drying rooms and cellars of Salamanca, natural maturation over time generates aromas and sensations, these extraordinary pieces are transformed until they acquire their final nuances with rest.

Its long stay in the drying sheds of Guijuelo and other pork-producing towns in the area allows it to refine its nuances and obtain the characteristics and flavor aromas of feeding the acorn-fed Iberian pig in the pastures.

Salamanca has a determining microclimate for the slow and natural curing process in acorn-fed Iberian hams, sausages, yeah, in winter here is dry and very very cold. -8º

The Acorn-fed Iberian loin is produced using a 100% artisanal production process, a recipe with years of history that is passed from generation to generation.

Within the Iberian sausages, made with meat from the noblest parts of the Iberian Acorn-fed pig, minced or chopped, subjected to a salting process. The characterizing ingredient for salchichón is “Pepper”, salt, other spices, seasonings, ingredients and additives are also added; for chorizo the most present ingredient is paprika. Afterwards, it is kneaded and stuffed into natural casing, and finally it is subjected to a curing and maturation process that ensures good stability, in addition to the flavor and aroma of the charro sausages.

 

These Acorn-fed Iberian Hams come from Iberian pigs fed acorns, grasses from the pasture and natural cereals. It is ideal for enjoying the authentic flavors and aromas of Acorn-fed Iberian Ham. It is an excellent option to remember the jewel of our gastronomy and create unforgettable moments with your guests.
