For the selection of the hams, a sensory evaluation will be carried out that will consist of two phases, visual and olfactory-gustatory. 

Tasting panels will be formed, each of them will be made up of 5 expert tasters who will be coordinated by one of them and all the panels will be directed by a technical tasting coordinator who will set the common and specific criteria according to the type of award. 

Once the sensory evaluation is completed, the technical tasting coordinator will prepare a technical report with the results of the tests carried out, which will be submitted to the presidency of the jury. 

Subsequently, the jury will identify the finalist ham samples with their corresponding coding and based on all of the above, they will issue a report specifying the result of the evaluation.
